My mate and I have considered Canada as a place where we would like to live. It is a vast area, but mayhaps some day we will be close enough for a visit to be reasonable. You are high up on my list of creatures I would like to meet this time around. Those cookies surely put you up a notch. Mmm.. ;P

Sugar Cookies

1/2 c. butter
1 c. sugar
1 egg
1 3/4 c. flour
1 tsp. baking powder
1 tbsp. milk
1/2 tsp. vanilla
1/4 tsp. salt.

Eggwash:
1 egg and 1 tsp. milk, beaten until frothy.

Preheat oven to 350 degrees F. (I recommend using baking paper on dark cookie sheets. If you don't have either, heat the oven to 375.) Cream butter and sugar, add egg and mix. Add remaining ingredients and mix until smooth. Refridgerate dough 2 hours.

Roll out dough on floured surface.(I roll mine out between 1/8th and 1/4th of a inch thick - thicker rolling makes for floofier cookies, like mine. Don't get it too thick, tho.) Place cookies on sheet and eggwash lightly with a 1" pastry brush. (This makes them shiny, and browns nicely. Decorate with coloured sugar (like mine! - I buy my sugars at the bulk store, but jimmies and other pretty tasty things are good too.)

Bake for 12-15 minutes or until lightly browned. (Keep your eye on them - larger cookie shapes take longer to bake, as do thicker cookies.) Let cool 5 minutes on sheet then remove to cooling rack.

If you use the baking paper with coloured sugar and you do a lot of cookies, empty off all the excess sugar into the sink or the garbage between each time you use the tray - that way you don't end up with burnt sugar or muddy colours stuck to your cookies.

c is for cookie, that good enough for me... *giggle* well you said you wouldnt send cookies to janis how bout ya send some to me and sil *grins... runs away looking for something that hopefully tastes half as good as those look*
