I like crimini mushrooms, peas and parmesan. Also, there's a world of difference using a bit of wine to start it off. Mmmmmm. A little for the risotto, a little for me, a little for the risotto, little more for me.
Risotto is a rice dish from Italy; you use a medium-grained rice that's slightly sticky. Arborio is the standard. You sauté some onions and garlic in oil or butter, then coat the dry rice in that and let it cook a couple minutes. You then add broth or wine or water (or whatever) in small doses, stirring very often, waiting until the rice has absorbed the previous dose to add the next one.
The constant stirring makes the rice all creamy and soft; the oil coating on the rice forms a roux with the excess starch that rubs off the rice.
It's really good for using up leftovers! Next time, though, I want some white wine in there, and some tasty cheese.
